The \u003Cstrong>middle layer\u003C\u002Fstrong> is chitinous — the same tough material that makes up insect exoskeletons. Stomach acid does not destroy it — it actually suppresses hatching, which helps the egg survive the extreme conditions of the stomach.\u003C\u002Fp>\n\u003Ch2 style=\"color:#111;font-size:21px;line-height:1.4;margin:28px 0 12px;\">\u003Cstrong>The alarm clock is in the small intestine\u003C\u002Fstrong>\u003C\u002Fh2>\n\u003Cp style=\"margin:0 0 18px;\">So what finally opens the capsule?\u003C\u002Fp>\n\u003Cp style=\"margin:0 0 18px;\">When the egg reaches the small intestine, bile salts such as taurocholate — amphiphilic molecules that normally emulsify fat — dissolve and disturb the lipid layer that stomach acid could not penetrate, increasing the shell's permeability. The egg then senses the pH and osmotic signals of the small intestine and wakes from dormancy.\u003C\u002Fp>\n\u003Cp style=\"margin:0 0 18px;\">The stomach cannot crack the shell. The small intestine is exactly where the shell is meant to open.
